Late at night, it was chilly and snowy when I came back from Switzerland a few years ago. On my way home, I stopped at our local fish and chip shop and talked to the owner about how good their chips were. He told me they used Ramos potatoes and gave me half a bag to try. They were the best home-cooked chips and potato wedges we’ve ever had.

Maris Piper and King Edwards have been the potatoes I’ve used most often up until this point. When I tried Ramos potatoes in a lot of different ways, I decided to use them only for baked potatoes, chips, and potato wedges. Maris Pipers still have the best roast potatoes.

Ramos is a Dutch-grown main crop that makes a lot of good-sized potatoes. They have very soft skins, which makes it very easy to peel them off. They also don’t have the same problems as other potatoes when they’re kept at a low temperature, says the owner of the Lakeside Chippy.

Ramos potato chips/fries were softer than Maris Pipers, and there was less fat or grease in them. There wasn’t much before, but now it looks like the chips were baked in the oven with a little bit of oil. It was the right amount of crisp and crunch in the chips. I didn’t have to cook the triple-cooked duck fat chips in the oven.

In addition, Ramos potatoes are less likely to be undercooked or fried. It takes two minutes to cook chipped Maris Pipers in boiling water too long or too long not to cook them at all. There must be at least six minutes for Ramos to do his job Same thing happens when you fry. There isn’t a lot of debris or discolored chunks left in the fryer after that.

Method

Potatoes should be washed to get rid of extra dirt, then peeled and washed again. Chip-sized chunks are cut and put in a big saucepan filled with water.
Use your hand to stir the chips in the water after all the potatoes have been cut. Then, put the chips through a sieve and add water to the pot. Repeat this until the water is clear after the chips are spun.
Drain the chips again and put them in the pot. A sharp knife can be used to see if the chips are done cooking, which should take about 8 to 10 minutes. Drain the chips and put them in a colander to keep them from getting wet. If you’re making steak and don’t know when the chips will be ready, you can make the steak in advance and cook the chips afterward.

Take the deep-fat fryer (or a big pot) and heat it up to 180°C (no higher). Take care when you add the chips to the fryer and cook them for 8 to 10 minutes, or until they are dry and crunchy.
